one week menu #4 meatloaf

So I am all about the convenience since I have two children under 5 who are with me when I am making dinner. I either try to prepare or cook some or all of the food during naptime, or I get pre-made stuff sometimes.

Today was one of those days.

leftover coleslaw
spinach-tomato sauce spaghetti
oven fries

Buy some premixed meatloaf at the local organic/whole foods store. (ours is called new seasons). Put it in a pan and in a 400 degree oven for about 45 minutes (depending on how much you have). Take out the leftover coleslaw and mix with a store bough italian salad dressing (or just mix together olive oil and balsamic vinegar with some mustard thrown in ). Add whatever vegetables you have (we had some radishes and lettuce from our delivery). Boil spaghetti. Before you take spaghetti out of water, throw in some baby spinach until wilted. Drain the whole shebang and mix with store-bought spaghetti sauce. Wash potatoes. cut into fry-like shapes. Put a drizzle of olive oil on a baking sheet. After making sure the potatoes are dry, put them in a single layer on the baking sheet. Sprinkle with coarse salt. Put in 400 degree oven for about 13 minutes, then mix them around and bake for another 4 or 5 minutes.

In terms of family, maika was sick so she didn't eat anything. mia ate the meatloaf and spaghetti and fries. Naotoand i finished off the salad.
