Only Slightly Guilty: Honey 5 Spice Cookies

Yeah...it's been a while since I posted. But I realized I needed to have a central place to put my recipes, etc. so...there you go.

My dad is on a low sodium diet, so I found a cookie I "healthified" a little bit and voila, a delicious cookie that he can eat with no worries. No salt! Coconut oil instead of butter, add chia seeds, whole wheat flour/oatmeal flour and half the original sugar.

It's the turbinado sugar that makes this one yummy, though.

And the secret ingredient? chinese 5 spice powder. Who needs salt when you have anise, cinnamon and fennel? You could also add chopped walnuts at the end for delicious, cancer-fighting goodness.

Ingredients
⅔ cup oil
1/2 cup sugar
¼ cup honey
1 egg
1 tsp. vanilla extract
1 and 1/2 cup whole wheat flour
1/2 cup oatmeal ground fine
2 tsp. baking soda
½ tsp. Chinese 5 spice powder
1/4 cup Chia seeds
turbinado sugar, for rolling

Instructions
Preheat the oven to 350°F.
In the bowl of a standing electric mixer, beat the oil, honey, and sugar until smooth.
Add in the egg and vanilla mix until combined.
Mix in the flour, oatmeal, baking soda, chia seeds, and spice powder.
If your dough is soft, refrigerate for 15-30 minutes until firm.
Shape the dough into balls and roll in the turbinado sugar making sure to coat the whole cookie.
Bake on a parchment lined baking sheet for 7-9 minutes until the edges are light brown in color.
