2012-03-06 10:35 AM Pineapple Cookies I think I need to get a life. I am doing too much sitting and cooking desserts. Oh well. Here is another recipe I just tried yesterday.
So here's my take on these. I would rather try using butter (unsalted) instead of Crisco. Not a fan of Crisco but I used it here anyway. I use a small ice-cream-scoop-type-of-thingy to scoop out my cookie dough and drop onto the cookie sheet. This makes a height of about an inch. I would probably flatten the dough out with a fork in future so they would be more crispy. (I like crispy cookies and Paul likes chewy ones). I would cook them a bit longer than the 12 minutes. Like I said, I like crispy/crunchy rather than soft and chewy. I would also use pineapple that is in sweeetened syrup rather than the kind I used which is in it's "own juices" and is not sweetened. I couldn't taste the pineapple very easily and I think it needs a bit more pineapple flavor. Otherwise, these cookies were a hit with the Olde Man. He said he could taste the pineapple, even if I couldn't. The only reason I made these so soon after the Raspberry Bars was because Paul likes to have a stash of cookies to have with his lunches and after supper. We always have a supply of homemade cookies for him and the bars are just not cookies. I had one with my morning cup of coffee this morning and it was very yummy indeed. Cheers, Bex
