2003-11-13 6:50 PM Hawaiian Potato Salad Previous Entry :: Next Entry Read/Post Comments (0) This morning I was researching information about mushroom varieties, and I found a nice recipe variation for potato salad. The dish comes from the Great American Spice Company:
Aloha Sweet Potato Salad ½ LB Bacon 3 C Diced cooked sweet potatoes 2 C Pineapple chunks ½ C Mayonnaise 1 TBS Dijon mustard 2 TBS Lime juice ½ tsp. pepper ½ C Macadamia nuts Romaine leaves
Cut the bacon slices into ½-inch pieces and fry in a skillet until well browned. Drain on paper towels. Combine the bacon, sweet potatoes, and pineapple in a large mixing bowl and toss lightly. In a small bowl combine the mayonnaise, mustard, lime juice and pepper. Add dressing to the potato mixture and mix lightly but thoroughly. Just before serving, stir in the macadamia nuts. Serve the salad in a chilled salad bowl lined with romaine leaves.
