2004-02-09 5:55 PM Diabetic Eats Previous Entry :: Next Entry Read/Post Comments (0) As I was gathering April recipes last night, I had the bright idea to add yet another page to Shenanchie’s Kitchen – this time a special set of recipes for diabetics. My husband has type II diabetes, and while he is quite aware of what he should and shouldn’t eat, he tends to ignore common sense anyway. No matter that I prepare healthy food for the most part – when he wants that extra slice of bread or a candy bar, there is no stopping him. He has a stock answer when I remonstrate with him - “I can cover myself with the insulin.” It seems no matter what I try to do, or what I say to him, my husband will do as he pleases.
I’ve thought about creating a special recipe page for diabetics for a long time, but I wasn’t sure how to go about it. I’m not an expert, nor do I have any medical training. However, my husband has gobs of reference material he has collected over the years (if only he would pay heed to some it), and I hope to make use of this in developing the new recipe page. There are also numerous web sites with information about diabetes, and I can already see these will be helpful as well (with all credit due referenced to its proper place). I’m not sure if I can have the page ready for the April update – in other words, I’m making no promises – but if not, the page will definitely be ready by the time the July update comes about.
