2004-02-12 7:03 PM Biscuit Recipe for Diabetics Previous Entry :: Next Entry Read/Post Comments (1) ::The other day I mentioned I was putting together a special diabetic recipe page, and ever since I have been looking about for dishes I know my husband will fancy. I found the following at Lifescan – my hubby is particular to bread and biscuits (along with tortillas), so this recipe will suit him fine:
Flaky Biscuits 2 C Cake flour 2 tsp Baking powder ¼ tsp Baking soda ¼ tsp Salt ¼ C cold margarine, diced ¾ C low-fat buttermilk
Preheat oven to 450°F. In a medium mixing bowl combine flour, baking powder, baking soda, and salt. Cut in margarine with a pastry blender until lumps are pea-sized or smaller. Stir in buttermilk with a fork. Press dough into a ball. On a lightly floured surface roll dough into a 6 x 10" rectangle. Fold in short ends to meet in the center. Fold dough in half so it is four layers thick. Roll dough into 6" square. With a floured knife cut into 12 squares. Place 1½" apart on an ungreased baking sheet.
