Every day for lunch I’ve been making a meal-sized salad by combining different types of lettuce (iceberg, romaine and Bibb), along with diced carrots, fresh baby spinach, green and red peppers, scallions, cubed cheddar and mozzarella cheeses, deli chicken meat cut into thin strips, large handfuls of cashews, salted Spanish peanuts, Almond Accents and just enough Ranch Three-Cheese Dressing to hold it all together. I absolutely adore salads, and anything at all that contains nuts, so I’m not complaining. My husband thinks I’m crazy, but I can’t think of a better mid-day meal.
Perhaps the only thing that could lure me away from my salads is a freshly prepared Mexican feast (as I indulged in last Thursday when I met my cousin Sheila for lunch at Casa de Oro), or a nicely turned out Japanese dish.
By the way, does anyone know why grocery stores place the plastic netting over heads of iceberg lettuce? I have a suspicion it’s to hold all the leaves together, but I’m not sure. Any ideas? Read/Post Comments (1) Previous Entry :: Next Entry Back to Top |
