2004-02-29 4:19 PM No-Bake Cheesecake Previous Entry :: Next Entry Read/Post Comments (1) Last night I was up until all hours updating my official web site, after which I decided to make my first no-bake cheesecake. Jell-O has several flavors of the cake, and I chose the original. The only ingredients needed (aside from what’s in the box), are six tablespoons of butter, a dab of sugar and some milk. The instructions called for two tablespoons of sugar, but I only threw in a skiff (I don’t like overly sweet cheesecakes – rich, yes, but not too sweet). The process was relatively simple (I used my electric mixer to blend the filling with the milk), and I was finished in about ten minutes. The cheesecake is small (my husband prefers gargantuan), but it will have to do, and is actually quite tasty.
Speaking of my web site, I can’t help but plug the special “viewing” I’m providing for one of my books: Foofer, the Pooka & St. Patrick is a short story for children, and I am showing the tale in its entirety for the month of March only (in honor of St. Patrick’s Day). Writing short stories is not really my forte (writing lengthy fiction is how I spend most of my waking hours), but the short being displayed seems to be the favorite for many out of the seven books in the little series (written from the viewpoint of my pooch, Foofer).
