My husband has made a convert to refried beans on flour tortillas – me! Refried beans are not one of my favorite foods; I don’t even like them at restaurants. However, this evening my husband prepared a quick meal by briefly heating large flour tortillas on the stove element, then he spread canned refried beans to one side of each tortilla. On top of that went sliced cheddar cheese, and then he wrapped the tortillas and folded them in napkins. The cooking time in the microwave totaled twenty-two seconds, and the tortillas and beans came out piping hot. I wasn’t particularly hungry, but I ended up having two tortillas with beans and was mighty satisfied.

 

This led me to search the web for more recipes using refried beans, and I found a collection of three at the CD Kitchen. I might have to give one of them a try this weekend.
