2004-04-15 6:24 PM Cooking with Sour Cream Previous Entry :: Next Entry Read/Post Comments (1) Someone posted two sour cream recipes on the food forum, as well as a link to a web site featuring more such dishes. The following recipe includes chicken and mushrooms, two of my favorite foods:
Chicken in Sour Cream 2 LBS chicken pieces ½ C flour 2 tsp. salt ¼ tsp. pepper 4 TBS butter or margarine 1 C sour cream 1 C chicken broth 8 ounces sliced fresh mushrooms 1½ tsp. paprika
In a clean plastic or paper bag, combine flour with salt and pepper. Toss chicken pieces with flour mixture. Melt butter in a casserole dish or skillet; brown chicken on all sides. Mix in sour cream, broth, mushrooms, and paprika. If the skillet is not oven-proof, transfer mixture to a casserole dish. Cover and bake at 350° for 45 minutes, or until chicken is tender. Serves four.
Another recipe offered was a dessert of sorts (or rather bread), and sounds just as delicious:
Sour Cream Banana Bread 1 C sugar ½ C oil 2 eggs 1 C mashed bananas (2 medium) ½ C sour cream 1 tsp. vanilla 1½ C all purpose flour 1 tsp. baking soda ½ tsp. salt
Preheat oven to 350° F. Grease and flour bottom only of a 9 X 5" loaf pan. In large bowl, beat together sugar and oil. Add eggs, bananas, sour cream and vanilla; blend well. Add flour, baking soda and salt; stir just until dry ingredients are moistened. Pour into prepared pan. Bake for 50 60 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes; remove from pan. Cool completely. Wrap tightly and store in refrigerator. Makes one loaf.
