2004-06-06 7:20 PM Midday Repast Previous Entry :: Next Entry Read/Post Comments (1) Today for lunch I had a yen for a tuna sandwich and a bowl of pea soup. When my parents were here visiting, they brought me several cans of Habitant Pea Soup with Smoked Ham (a product of Canada, which I have never seen in any of the American grocery stores that I frequent). The soup is thick and heated without water dilution; a very hearty meal by itself with a wonderful flavor.
My father always adds sliced green olives to tuna, and I have acquired a taste for the mix in which I also include minced celery. Today I toasted sliced French bread and spread whipped butter on one half; on the other half I placed a thin piece of Provolone cheese, and then added the tuna. On top came romaine lettuce and pepper.
