Celery Snacks

This recipe was in included in the Campbell’s Kitchen newsletter at the first of the month:

Celery Cheese Boats

Celery stalks, cut into 4" pieces

Whipped cream cheese

Shredded carrots

Pepperidge Farm Pretzel Goldfish Baked Snack Crackers OR

Original Goldfish Baked Snack Crackers

Fill each celery "boat" with about 1 TBS of cream cheese. Top with carrots. If you like, cover with plastic wrap and refrigerate until serving time. Arrange the Goldfish crackers swimming on cream cheese filling.

Tips:

  • Peanutty Celery Boats: Fill celery "boats" with crunchy peanut butter instead of cream cheese.

  • Texas Celery Boats: Fill celery "boats" with whipped cream cheese mixed with salsa.

I’m not normally a great consumer of celery, and only tolerate it in potato or chicken salad. I also like Campbell’s Cream of Celery Soup, but if I find celery in stews or other vegetable soups, I typically pick out the pieces.

But the celery cheese boats might be worth a try…
