Serving of Breakfast Pumpkin

I had planned to make my own pumpkin pancakes, but last Sunday my husband and I could no longer resist the lure of I-Hop (International House of Pancakes). It helped that we had a coupon for “buy one entrée and get the second one free,” and while my husband had a large cheese omelette I ordered the pumpkin pancakes.

 

They were delicious, of course, served with a dollop of whipped cream on top and a sprinkling of pumpkin pie spice. My husband was leery, but when I had him taste a bite his first question was: “Do we have any canned pumpkin at home?”
