Only Slightly Guilty: Nut-free Granola Bars

In my never-ending quest to find something Girl2 will agree to take as a snack to school (yes, I have to FORCE her to take a snack) and doesn't contain nuts (her class is nut-free due to a severe allergy classmate), I came across this recipe on Allrecipes.com. Then I changed it up a bit. Deleted the sugar, added Chia Seeds and more interesting dried fruits (raisins are boring).

Girl2 likes it! Although it is awfully crumbly. Maybe I'll try it with extra honey next time...

2 cups rolled oats
1/4 cup Chia Seeds (optional)
1/2 cup wheat germ
3/4 teaspoon ground cinnamon
1 cup all-purpose flour
3/4 cup dried fruits (I LOVE the dried blueberry/strawberry mix from Trader Joes)
3/4 teaspoon salt
1/2 cup plus 3 tblsp honey
1 egg, beaten
1/2 cup vegetable oil
2 teaspoons vanilla extract
1/4 cup chocolate chips (optional)

Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13 inch baking pan.
In a large bowl, mix together the oats, chia seeds, wheat germ, cinnamon, flour, dried fruit and salt. Make a well in the center, and pour in the honey, egg, oil and vanilla. Mix well using your hands. Pat the mixture evenly into the prepared pan.
Bake for 30 to 35 minutes in the preheated oven, until the bars begin to turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Do not allow the bars to cool completely before cutting, or they will be too hard to cut.
