2006-01-21 12:09 AM saturday morning So, you're probably wondering what I'm doing up at 12:10 a.m. on a Saturday morning, particularly since the kids are sleeping.
I am making a cheesecake. That's right, folks. And let me tell you, it's not a wise thing to do when one is as tired as I am. We will be lucky if this thing turns out right. Now, before you tell me I'm crazy (and I agree with you), let me explain my rationale. See, last weekend was my sister-in-law's birthday party. And I promised my brother I'd bring The Cheesecake. You know, the one with five packages of cream cheese, seven eggs and whipping cream? And takes about 1 1/2 to make and then has to sit in the fridge for 8 hours? Yeah, that one. And we missed the party -- the kids were sick. So we're doing a redo this weekend. I didn't exactly forget to make the cheesecake, I just got a little bit distracted doing housewifey types of stuff, like laundry and making beds and making a late dinner because Rice didn't get out of town until seven. It was 10 before I realized a cheesecake needed to be made. Now, I could have made a smaller cheesecake. But I would have had to make 2 to feed everyone. I could have blown it off, but (due to extenuating circumstances) I feel like I keep blowing them off anyway. So I made the stupid cheesecake. I really hope I haven't killed it. I started it out in the convection oven so that it might bake faster ... I've never done this before, mind you ... and the cheesecake seems to have gotten a little brown on top ... let's hope it doesn't suck. *sigh* I really need to quick blathering on and go to bed.
