I have several, depending on what I feel like doing. Usually, however, I make a German potato salad, which Rice prefers. (It's a hot potato dish with potatoes, bacon, onion, paprika, dry mustard, vinegar, salt, parsley, etc.) This, however, was the salad I made recently. It's my grandma's recipe, very basic and good. Sadly, this is one of those things where I don't have specific amounts. A good portion of the time I'm one of those "anyone knows how much" sorts of cooks, which I know isn't necessarily true. I'll do my best to guesstimate amounts... well, at least some of them. 2 1/2 - 3 pounds red potatoes (My grandmother used regular Russet ones, I think, but the whole peeling thing sounded like a pain). I cut these into bite-sized pieces and then boiled them 1/8 cup minced onion 6 hard boiled eggs (Potato salad never has enough eggs -- I guarantee Grandma never used this many eggs for 2 1/2 pounds of potatoes) Salt to taste Mayo to preference Fresh dill (Grandma always grew her own dill, potatoes, and onions, and for a long time she also had hens to lay the eggs.) Drain boiled potatoes, put in mixing bowl and add the onion and salt, and then toss. (The onion will cook slightly). Wait a few minutes and then stir in mayo, eggs, and dill until well combined.
