I have confirmed that I am moderately lactose intolerant. I can't drink milk. Cheese, okay. Yogurt, okay. Those are in really tiny doses usually, and processed in ways that make them digestable. But plain old milk.... can't do it. I don't mind normally because I really don't like the taste of milk. I miss it sometimes only because I do really like the taste of hot chocolate. In a moment of inspiration tonight, I figured out how to make decent almost-dairy free hot chocolate without it being grainy or odd-tasting due to the presence of soy milk.

Ingrediants:
Nutella (has traces of milk in it, this is the only "dairy" product)
Vanilla Soy Milk (I used 365 Organic Vanilla Soymilk)
Oat Milk (or just use the soy, I just like the oat milk is all)

Put a teaspoon or two of Nutella into the bottom of a mug. You might have to use your fingers to get it in because it's stickier than peanut butter. But don't be afraid, it's quite yummy and licking it off your fingers is half the fun. Splash a couple of teaspoons of milk substitute into the mug and heat on high in the microwave for a minute or so. Mix it all up with a spoon until it's blended, then add the rest of the milk to fill the mug as high as you want it. Heat for another 2 minutes, give or take. Stir and sip.

As it turns out, the Nutella has quite a creamy texture and counteracts all the non-creaminess of the soy milk or oat milk. This does taste different than regular hot chocolate, mostly because it also tastes like nuts, but it's quite yummy. If you skip the final bit of microwaving, you can make some decent chocolate milk too. :)
