Scout Salad What you need: - fresh spinach - pine nuts, roasted - parmesan cheese, grated or shaved - garlic, chopped and roasted (or roasted and chopped) - balsamic vinegar - bowtie pasta, cooked - salt and pepper ________________ What you do: Cook pasta. Roast or brown pine nuts. Roast and chop garlic. Put two big handfuls of fresh spinach in a wide shallow salad bowl. Sprinkle with two pinches of shaved parmesan cheese. (Leave out cheese, and it's vegan.) Add pine nuts and garlic. Finally, add bowtie pasta and toss. Drizzle with just a touch of balsamic vinegar (and perhaps a little olive oil if you're so inclined). Salt and pepper to taste. (You won't need much.) Munch it all down! The point is that the hot pasta wilts the spinach, but the greens are not cooked, and so they retain all the nutrients.
