2003-11-21 6:56 PM Peanut Chips into Bread Previous Entry :: Next Entry Read/Post Comments (0) Several weeks ago I bought up four packages of chocolate and peanut butter chips because they were on sale. Nicely done, but then I never used them. Yesterday I was cleaning out one of my cupboards and I found the packages again, so I decided to try and find a recipe where I could use up the peanut butter chips (before anyone asks, the chips kept well and were not spoiled). After a bit of searching, I found the following recipe at the Food & Recipe Message Board, but I also added a cup of the chips to the mix and cut the sugar in half:
Peanut Butter Bread 2 C flour 1/3 C sugar 2 tsp. baking powder ¼ tsp. salt ¾ C peanut butter (creamy or chunky) 1 C milk 1 egg, well-beaten
Preheat oven to 350° F. Grease an 8-by-4-inch loaf pan. Put the flour, sugar, baking powder and salt in a large bowl. Add the peanut butter, milk and egg and mix until well-blended. Spoon into the pan and bake for about fifty minutes; remove pan from oven and cool on a rack. Makes one loaf. Instead of making one big loaf, I baked three small ones. They turned out beautifully – moist, light tan in color with the peanut butter chips protruding slightly. The first slice was sumptuous with a nice hot cup of tea.
