Cups of Ham

The other day my husband bought a huge ham on sale, and I’ve been trying to think of ways to use it up. Today lunch consisted of cubed ham mixed with white sticky rice and a dash of teriyaki sauce; other ideas include ham fried rice, stir fry, sandwiches, ham omelettes, potatoes and ham, ham and bean soup chef salads.

 

I’m also going to prepare the following recipe sometime this weekend or perhaps next week (another winner from Campbell’s Kitchen):

Ham & Pasta Skillet

1 can (10 3/4 oz.) Campbell's® Broccoli Cheese Soup

1 cup milk

1 tbsp. spicy brown mustard

2 cups broccoli flowerets OR 1 pkg. (10 oz.) frozen broccoli cuts

1 1/2 cups cooked ham strips

3 cups cooked medium shell pasta

 

Mix the soup, milk, mustard and broccoli in skillet. Heat to a boil; cover over low heat for five minutes, or until broccoli is tender. Add the ham and pasta and heat through. Serves four.

Then there is always ground ham (as in a meat loaf of sorts), and maybe some bites for Foofer and Rainee. My cup runeth over
