Quick Enchilada

This recipe is mouth-watering, yet so very easy:

Five-Minute Cheesy Enchilada Grande

½ C shredded cooked chicken OR pork OR beef *

1 flour tortilla (10")

½ C Pace® Enchilada Sauce

½ C shredded Cheddar Jack cheese

 

Place the chicken down the center of tortilla. Top with half the enchilada sauce and half the cheese; roll up and place seam-side down on microwave-safe plate. Top with remaining sauce and cheese. Microwave on HIGH 1½ to two minutes or until cheese melts. Serves one. Tip: Cheesy Enchilada: Omit chicken and use 1 cup cheese. Place ¾ cup cheese on tortilla; top with half the enchilada sauce. Roll up and prepare as above.
