Chips, Cheese & Tuna-Crackers

This afternoon I went on a spree with tortilla chips and Salsa con Queso, so I decided to prepare a light dinner tonight. I assembled tuna with mayonnaise and sliced green olives, then opened a box of Breton crackers (that had been sitting on the shelf for a few months), and spread the tuna mixture on the crackers. It was a wonderful taste combination, and even my dogs got into the act (sans the tuna, though).

 

My husband is not one for “light dinners,” so he cooked himself scrambled eggs with bits of potato thrown in. However, when he saw what I was eating and tried some, he ended up finishing the rest of the tuna with the crackers.

 

Who said healthy eating isn’t infectious? After the tortilla chips and cheese, that is.
