2004-10-06 4:58 PM Spicy Memories Previous Entry :: Next Entry Read/Post Comments (1) Yesterday I felt good after eating one of my favorite “comfort” foods: steamed rice and fresh broccoli. I love the combination, and I can eat the mix for days without even thinking of meat or snack foods. I’m not really much of a sweet-eater, preferring savory fixings to any other (the more salty and spicy, the better).
Then last night as my husband and I were lying in bed with the dogs watching television, I remembered the spice cake my mother used to make for my birthday, and my father’s birthday (which comes exactly one week after mine). Since it’s long past my birthday, and I wasn’t watching a food-related program on the telly last night, I can’t imagine where the cake-yen came from.
It’s been years since I’ve had the cake, much less prepared it. When I mentioned it to my husband - spice cake with peanut-butter frosting – he looked as if he might lose his cookies, but I tried to reassure him it was one of the best. Therefore, this morning I went to the store and bought the Duncan Hines spice cake mix and a container of butter-cream white frosting. Once I had the cake in the oven, I mixed the frosting with about three tablespoons of peanut butter and let it stand at room temperature.
Once the cake had cooled, I lightly frosted the top and sides (reserving the leftover sweet-frost for God knows what). My husband had a slice with a cup of coffee and nearly lost his mind. He was prepared to hate it, to dismiss it, but as I predicted he loved the cake. It is a good blend, as odd as it sounds.
