2004-10-19 4:45 PM Potluck Stir-Fry Surprise Previous Entry :: Next Entry Read/Post Comments (0) Last night my husband was having a potluck at the hospital where he works, so instead of buying a pre-made fruit or potato salad at the grocery store, he threw together his own concoction.
He started with thick pork ribs, slicing them in half lengthwise and then chopping them into small bite-sized pieces. He cooked the meat in a skillet with minced onion and chopped bacon. For seasoning, he added salt, pepper, garlic and dried coriander. After while he poured in a can of chopped tomatoes with their juice, and a medium-sized can of cut green beans, drained. He let the entire mixture simmer for about twenty minutes before letting us try the dish.
We heated flour tortillas on the stove element and then spooned the meat mixture inside, rolling up the tortillas before eating. My husband’s little potluck combination was quite delicious, although it went against my grain as he did not drain the fat after cooking the pork and bacon. I’m not sure what to call the dish, other than some sort of potluck stir-fry in a tortilla.
