There wasn’t much cause for celebration in my house today because of the election disaster, and the kitchen remained cold except for the ever-warming coffee pot.

This afternoon I found a rather small web site titled A Taste of Cork that contained a small selection of Irish recipes.

Celtic Wedges

2Kg Potatoes

300g Plain Flour

Spices:

50g Turmeric

25g Chilli Powder

50g Paprika

50g Dried Mixed Herbs

25g Rock Salt

200ml Vegetable Oil

Wash the potatoes and cut into wedges (six pieces per potato). Mix flour and spices together and add rock salt. Coat the potatoes with the spiced flour. Heat roasting tray with vegetable oil, when hot add in the flour-spiced wedges and cook in the oven at 180°C for 20 minutes before serving.

All of the measurements are metric, with a UK oven temperature. A good converter for measurements and temperatures can be found at Online Conversion.
