I've been on kind of an India Pale Ale kick lately, maybe it's those hot August nights, err September nights...

whatever...

India Pale Ales are very hoppy, pretty high in alcohol, and they have a real floral taste to them. The wife thinks they taste like bile, but I prefer the adjective 'floral' instead. Then again, my palate isn't as sophisticated as hers.

Last night I had Samual Smith's IPA, it has a very delicate flavor for an IPA. A lot more subtle with the hops but the flavor stays throughout the sip. I tried Hitachino's Japanese Classic Ale a while back (which is an IPA reciepe brought to Japan by English sailors) and it had that classic KICK! right at the first, but then the aftertaste was mellowed a bit.

BAM! Flowers/weeds, alcohol, then bitter, then smooth.

One of the best things about IPAs is that the hops/alcohol helps keep them fresh even when they sit on the shelves for a while. Which is a good thing when you pick up some wierd ass $4 Japanese labeled bitter at the store...
