Munchie Monday - Scotch Irish Soda Bread

So, I served my Scotch Irish Soda Bread to my co-worker, Kristin, last week and her face melted into a expression of yum. I will tell you it took me three times before getting this recipe right, as it's easy for soda bread to become a frisbee. Try it out and let me know.

1 C all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
4 tsp sugar
2 Tbsp butter
6 Tbsp buttermilk
1 C raisins
1/2 C Scotch

Preheat oven to 425
1 - Combine all dry ingredients in a medium bowl.
2 - Stir in softened butter and buttermilk in mix.
3 - Sprinkle 1/2 tsp flour over work surface.
4 - Turn dough on floured surface and knead into a round.
5 - Place on baking sheet, misting with cooking spray and heavily brushing the dough with scotch.
6 - Bake at 425 for 45 minutes or until golden brown.
