Munchie Monday: Buttercream Kahlua Cake!

In honor of my birthday, I thought I'd share this recipe for my decadent friends who like booze. It's a rather simple recipe and you'll enjoy my 4 year old interpretation.

1 box of yellow cake mix
1 tub of chocolate icing
1 C Kahlua
2 eggs
1 stick of softened butter
1/2 C buttermilk
Blueberries, strawberries and tangerines


Preheat the oven to 400. As instructed, mix the yellow mix with the eggs, butter, buttermilk and other ingredients in a large mixing bowl. Add in a cup of Kahlua and mix until lumps are gone. Pour into a glass pan and bake for 45 minutes. Make sure to do the toothpick test. If it comes out clean, you're ready to frost. If not, bake for another 5-7 minutes and test again. Let the cake cool atleast 20 minutes uncovered. Then, frost the entire cake with the chocolate icing. Get all of the edges. It should be completely covered. Take 6 tangerine slices. Place two slices as eyes and frame 4 slices on the four edges of the pan. Take a full strawberry and place as the nose. Cut another strawberry in half and make the cheeks. Finally, form the mouth with the blueberries, however happy your cake is. Decorate with candles. Feel free to serve immediately or cover for that much needed chocolate fix later.
