Southern Succotash

An interesting dish from Kellogg’s Kitchen:

Southern Style Succotash

2 tablespoons margarine or butter

1 1/2 teaspoons Worcestershire sauce

1 teaspoon lemon juice

1/4 teaspoon red pepper

3 cups Kellogg's Corn Flakes® cereal

 

Succotash:

1/2 cup chopped onions

1/3 cup chopped green bell pepper

1 clove garlic, chopped

1 can (28 oz.) stewed tomatoes, drained

1 can (8 oz.) tomato sauce

2 tablespoons dried parsley flakes

1/4 teaspoon red pepper

1 package (1 lb.) frozen, cut okra, thawed

1 package (10 oz.) frozen whole kernel corn, thawed

 

In 12-inch fry pan, heat margarine, Worcestershire sauce, lemon juice and red pepper over low heat. Add corn flakes, stirring gently until cereal becomes lightly browned and crisp. Set aside for topping. Coat 12-inch fry pan with cooking spray. Sauté onions, green pepper and garlic. Add remaining ingredients. Cook, stirring occasionally, until okra is tender. Sprinkle with topping. Serve hot. Yield: 10 servings.
