Found the following recipe on recipeadayblogger and it sounds like a winner:

3 Tbs. butter

3 ½ apples, peeled, cored, coarsely grated

1 tsp. chipotle in adobo, finely chopped (or to taste)

8 (6-inch) flour tortillas

1 c. (4 ounces) shredded, packaged cheddar-jack cheese blend

4 oz. shredded or chopped turkey or chicken

2 green onions, sliced

Sour cream, for garnish

Green onion slivers, for garnish

Lettuce leaves, washed and dried


Think I'll try this with whole wheat tortillas and using Fuji apples, which are crisp and sweet/tart.
